Each Thursday at Nourish, our dinner menu is created based on what’s in Nash’s Organic Produce farm share box that week. Come and dine with us and gather ideas and inspiration for how you can best use the produce you will receive each Friday from Nash’s…or just come and enjoy a fresh, vibrant dinner. Recipes are always shared.
Following are the recipes we created to highlight Nash’s farm share box distributed on October 4th.
Broccoli Pesto
INGREDIENTS
2 cups broccoli florets, chopped
2 cups fresh basil, chopped
1/4 cup virgin olive oil
1/4 cup Parmesan cheese, shaved
1/4 cup nuts
6 cloves garlic
2 Tb broth (if needed)
Salt and pepper to taste
PREPARATION
Steam broccoli 3-5 minutes. Place steamed broccoli, basil, olive oil, Parmesan cheese, nuts garlic and broth in food processor and pulse until paste-like. Add salt and pepper to taste.
Wine Poached Pears
Ingredients
4-6 peeled, cored
1-1/2 cups Harbinger’s Merlot
3/4 sugar
2 Tb lemon juice
2 tsp vanilla
2 tsp cinnamon
Combine all ingredients except pears and bring to boil. Once the wine mixture is boiling, turn heat down to simmer and add pears. Simmer for 2 minutes, until tender to a fork test. Remove pears and let them cool. Gently boil wine sauce until half the volume. Pour sauce over pears and serve with cream.
